Roasted Chicken - april 30, 2013

I picked up some little tiny fingerling potatoes at the Farmers market. We'll have them for dinner, roasted along with the usual chicken and arugula salad on the side. You can't go wrong with this meal. Chicken and potatoes from the Joy of Cooking.

Boxed Mac and Cheese - february 8, 2013

Yes, that's right, I bought some pre-packaged processed food. This is what my kids and I do after arriving in town, late to a vacation house empty of anyone other ourselves. We go to the local Safeway and I give them the run of the place.

Chicken and Sweet Potatoes - january 25, 2013

The usual roast chicken, with which you can't go wrong, from The All New All Purpose Joy of Cooking, p 579. The recipe for Lime Cumin Sweet Potatoes is from Vegetarian Times, but they are not very good. Also served red cabbage cashew salad, from the October 2012 Sunset Magazine, which is very good.

Sautéed Chicken Breasts - january 17, 2013

Salted, in a pan with some olive oil. Served with ice bath broccoli, which is my daughter's more delicious sounding name for blanched. This is her favorite way to eat broccoli. The chicken is from the freezer, the legs of which made a chicken stir fry, and the rest made some stock. It's much cheaper to buy the whole bird. If that isn't enough, I'll put some bread and cheese on the table. I probably learned how to do this from my mother, but I'm sure it's in the Joy of Cooking, too.
