Curly Pasta with Sausage and Greens

A recent favorite that we cooked for dinner while visiting my Mom in Tucson. She liked it so much that she makes it for herself at home (and probably shares some with her dog). The recipe is from

The first time we ate this, my six year old, vegetable rejecting son actually said these words: "This is a way I could eat green things!"

Now, unfortunately, the honeymoon is over and my kids are not as enthusiastic as they once were for this super-easy dinner. I'm afraid I'll have to scale back and stop serving it weekly.
