We have more poblano peppers from the CSA box! And I suspect corn season is in full swing right now. On p.369 of 1997's The All New All Purpose Joy of Cooking.

This was good, though I was expecting more of a souffle than what we ended up with. The kids did not like it. I think there are probably better ways to make a spicy corn pudding.
