Same cookbook, different dish. This one will use up the rest of last week's zucchini and feature tofu, if I make it to the store to buy some. I'm debating making it with chicken stock instead of water, since we have no vegetable broth and I'd rather not make (or buy) any.

The adults in the house like this soup a lot. It could be a quick weekday dinner if I prepped ahead by chopping the potatoes, shallots and squash. My son wasn't interested in tasting it, though I think that had more to do with his mood than the soup itself. My daughter was out for pizza with a friend.
