Another great way to use one of the more challenging items that comes in our CSA box: cabbage. I adore cabbage, but my kids do not. Combining it with delicious crusty potatoes, a little dill (both were also in last week's box) and a sprinkling of mild, salty, cheese makes it easy to eat. 

The recipe is on p. 124 of  Deborah Madison's Vegetable Literacy. Try feeding it to your kids and let me know how it goes!

I commonly add about 1/2 head of green cabbage (finely chopped) to any bean-type soup. It virtually melts into the soup and isn't strong-flavored. And if I puree the soup it is undetectable.
