Watermelon Salad

The melon is refreshing, the herbs spicy bright, the nuts and cheese add just enough weight to make a substantial snack for a blazingly hot day. Or just remind you of one, if you have the ingredients but not the heat: this salad tastes like summer.
Watermelon, mint, basil, mozzarella and nuts. So delicious. Who knew? Erin Gleeson combines seasonal ingredients confidently in this book, whether or not they are accepted pairings of good taste.
This unexpected combination is my new favorite. Even my husband, who does not like watermelon, ate his without complaint. My kids prefer fruit to leafy greens, so I scaled back on the herbs for them.
