Quinoa with Romanesco and CoconutQuiona with Romanesco & Coconut

The recipe says to use cauliflower and broccoli, but I only had romanesco, which is a little bit of both. A chartreuse space-alien looking sort of brassica, it suits this dish just fine.

Marcus Samuelsson's unexpected flavor combinations shine through again here, in a subtly spiced Thai-Indian curried whole grain whose flavors are tamer than many other recipes from this book. I've never encountered quinoa cooked in coconut milk before, but I'll surely make it again. 

You can find the recipe on p. 46 of  Marcus Off Duty: The Recipes I Cook at HomeI served it with Dill Spiced Salmon and Raw Kale Salad with Root Vegetables from the same book, though the quinoa makes a nice light meal on its own. I know better than to try to serve just this to my children, though.
