Jalapeño Scrambled Eggs
january 25, 2015
Jalapeños seem like the perfect foil to the richness of eggs and the Bacon Biscuits we served for brunch, and they are, as far as my tastebuds were concerned. But the recipe also calls for half and half, which makes this egg dish just about as rich and fatty as the bacon biscuits alongside.
That doesn't always have to be a bad thing. But sometime I'll try making them without, just to see what happens. As long as you're planning to get lots of exercise, this meal is a fine start to any day. Although I will definitely add a side of grilled corn on the cob (as the recipe recommends) next time I serve it. We just didn't have any this time.
The recipe is on p. 96 of Marcus Off Duty: The Recipes I Cook at Home. Click here to read more about all the feasting we did today.
