Hummus and PitaYotam Ottolenghi's Hummus and Pita

Ottolenghi's restaurants are, as far as I can tell, all in London and all wildly popular. The recipes in this cookbook are from those restaurants. Ottolenghi bases his cooking on vegetables, pulses and grains from his native Israel. Luckily for me, that includes lots of whole grains, healthy proteins and vegetables that we get in our CSA box.

Hummus is a pretty basic thing. This recipe is actually for Hummus with Ful, pronounced like fool, which is a sort of soup made with dried fava beans. I haven't tried the ful yet, but this hummus is a favorite protein-rich snack at our house. My kids love to eat it on pitas fresh from the toaster, drizzled with olive oil and sprinkled with za'tar, which is a spice blend made of dried herbs, sesame seeds and sumac. This is also great as part of a light dinner with salad or soup, and freezes well in plastic bags or wide mouth jars.
