Zoe Nathan's Vanilla Raspberry Muffins
march 21, 2015
My daughter's latest pick from this cookbook, which I recommend she pull out whenever I hear, "there's nothing good to eat here!" I'm more than happy to let her and her brother fill up all that emptiness with something homemade.
We almost always have frozen raspberries around for putting in smoothies, which they used instead of fresh. The substitution worked out just fine. My kids loved these almost as much as Chocolate Chunk Muffins, from the same cookbook. Both are really delicious!
On p. 40 of Huckleberry: Stories, Secrets, and Recipes from our Kitchen. The princesses are from a fancy cupcake making kit my daughter received as a gift years ago, she dug it out of the cabinet when searching for vanilla and baking soda.
