This is a Senegalese dish that Marcus Samuelson likes to get in South Harlem. I was pretty excited to find a one pot meal recipe that calls for cabbage, and to see peanuts referred to as ground-nuts, since I've long wondered what ground-nut oil is. It often shows up in British cookbooks.

Basically a one-pot (jollof) rice dish with chicken, peanut butter, tomatoes and a few vegetables that disappear into the sauce, my husband and I really liked it. My kids not so much, which is too bad, because I was careful to keep the spiciness mild. It would be excellent with some heat.

I  subbed in snap peas for green beans, since it is spring and that's what we have, along with cabbage, from the CSA. I left out the eggs because we'd eaten some for breakfast.
