Pollan Family's French Lentil Salad

This dish is an example of good, honest food. It's a simple preparation that highlights the ingredients' flavors. The earthiness of the lentils goes well with carrots and onions, and a little bit of spice kicks it up a notch.
Usually both my kids love lentils, I toned down the heat in these to keep it that way, since they seem to be particularly sensitive to chiles. They ate them up!
On p. 227 of The Pollan Family Table: The Best Recipes and Kitchen Wisdom for Delicious, Healthy Family Meals. I served this with Maple-Balsamic Root Vegetable "Fries" from p. 250 of the same cookbook and grilled swordfish.
