Pan Fried Sole with Chimichurri SaucePollan Family's Panfried Halibut with Chimichurri Sauce

My grocery store didn't have any halibut, but it did have sole. It also didn't have any Wondra flour, so I used all purpose. Both substitutions worked out fine: this sauce is delicious, my entire family loved their fish!

Luckily my kids like to eat most seafood, as do my husband and I. So I've been trying to work it into our diet more often, at least once or twice a week, because it is a source of good fats and high in protein. But cooking fish inside the house instead of on the grill outside often leaves our kitchen smelly the next day. Today I focused on de-stinking the process, here's what I learned:

   - When pan frying or sautéing, keep the heat low to avoid spatter. It takes longer, but keeps the mess manageable and doesn't leave odiferous fish oil all over the place.

   - Instead of putting fish wrapping in the kitchen trash, take it directly to the outside trash can. Same goes for any leftovers, straight outside to the compost bin there. 

So far so good!
