Corn Bacon Hash

Super fast, super delicious, what's not to love? Apparently plenty, because neither of my kids ate it. Next time I'll triple the bacon.
I used parsley instead of basil because the Safeway near my Mom's house didn't have any basil. Which leads me to ask, what self respecting grocery store doesn't stock basil in the middle of Summer, when it grows like a weed?
The hash is still good with parsley, but better, I am certain, the other way.
This is good with rice, Salmon with Yogurt and Mustard Sauce and Salad with Basic Vinaigrette for dinner.

Corn Bacon Hash (adapted from Dinner A Love Story p. 29):
This takes 10 minutes to make.
It serves 4.
1 strip bacon
1 shallot, minced
4 ears of corn, kernels cut off
6 basil leaves, chopped
Salt
Pepper
Cook the bacon until crisp in a large skillet. Remove the bacon from the pan, pat with a paper towel and chop. Cook the shallot in the remaining bacon fat, then add the corn kernels and cook for a couple minutes, just until it becomes fragrant.
Pour the contents of the skillet into a bowl, add the bacon, basil, salt and pepper and toss. Taste again for salt and pepper.
