Pork Fried Rice

This morning my kids both refused to eat the omelets their dad had so kindly prepared for their breakfast. So I cooked up a pot of brown rice, stuck it in the the fridge and used it to feed them their omelets for dinner.
Plus a few other ingredients like shallots (because I didn't have green onions), pork tenderloin, chopped carrots, frozen peas and an order of pot stickers from our favorite Chinese takeout down the street. I've been making Grace Young's recipe for Yangchow Fried Rice for more years than I can count, but this time I stir-fryed raw pork with a little peanut oil instead of using ham and shrimp. Next I added chopped shallots, chopped carrots, frozen peas, cold rice and then the leftover omelets.
Sprinkled it all with soy sauce and that made dinner so fast I could post to this blog before we ate. Cha-ching!
