Lentil Soup with Spinach - may 30 2013

A quick, healthy, seasonal dinner. I might serve it with some bread or crackers...or I might not, depending on timing and mood. We have spinach and huge Eureka lemons from the CSA box and lentils in the pantry, so what could be better and easier? Here is Toby's recipe, on her blog.
