This is a Senegalese dish that Marcus Samuelson likes to get in South Harlem. I was pretty excited to find a one pot meal recipe that calls for cabbage, and to see peanuts referred to as ground-nuts, since I've long wondered what ground-nut oil is. It often shows up in British cookbooks.

Posole from Nopalito restaurant is one of my favorite lunches ever, so I thought I'd try making it myself. This version of posole has pork in a green broth, instead of beef in a red broth, and is quick to prepare, as long as the hominy has been cooked ahead of time or comes from a can.

My kids love tuna salad. My son makes me explain, over and over again, why he cannot eat it every day. He recently realized the connection between mercury in tuna and thermometers, which is really exciting to me, as his mother. But more importantly, I know he and his sister will always eat this toxic fish.

This is my favorite recent trifecta (or triple win): Mexican Green Rice, Lazy Chiles Rellenos, Yellow Indian Woman beans. I only wish my kids loved it as much as I do. They routinely ask for the beans by name and always manage to choke down a bite each of the rice and rellenos, so I'll call it good.

It seems like a million years ago that I made this for a different camping trip, way back in 2010. That dinner went so well that I'm doing it again, for my daughter's 3rd grade camp out potluck, four years later. Basically the same procedure this time, but with canned tomatoes instead of fresh. This summer's delicious locally grown ones haven't hit the markets yet.

I am really lucky, because both my kids love to eat dal. As tiny toddlers they could never get enough rice and chickpea soup at dinnertime. Now that he is in Kindergarten, my son and I share a weekly buffet lunch at the restaurant next d0or to his speech therapist's office. He loves to serve himself out of the buffet, I love to order dal from the kitchen.
